After a few weeks fermenting, the Golden Stag Ale was ready to bottle — and the results were well worth the wait. The NEIPA yeast and Citra hops experiment definitely paid off: the beer came out with a beautiful golden colour, slightly hazy from the hop additions and yeast character, and smelling wonderfully tropical and citrusy even before the first sip.
Bottling day is always one of the most satisfying parts of homebrewing. The gravity had dropped to its final reading, confirming fermentation was complete, and the beer tasted clean and fresh straight from the fermenter. A small amount of priming sugar goes into each bottle to create natural carbonation over the next week or two as the residual yeast works through it.










A nice golden colour and an excellent taste — the Citra hops came through beautifully with that tropical, grapefruit-forward character, and the NEIPA yeast added just enough haze and softness to make it feel much more craft than kit. A really successful batch, and one that proves how much a homebrew kit can be elevated with a few simple modifications. Highly recommended.
