Brew day! This time I’m going for a Festival kit — the Golden Stag — though with a couple of interesting modifications. Instead of the standard kit yeast, I’ve opted for the Hazy Datlyz NEIPA yeast, and I’m also adding a generous amount of Citra hops. The idea is to take a classic golden ale kit and push it towards something hazier and more hop-forward. Let’s see what this turns out like.
Festival’s Golden Stag is a traditional British golden ale kit — clean, biscuity malt, light body, and gentle hop character. On its own it produces a reliable, easy-drinking pint. But by swapping in a NEIPA-focused yeast strain and dry-hopping with Citra — one of the most popular American hops, known for its punchy tropical and citrus character — the plan is to get a hazy, juicy, hop-forward beer that’s closer to a New England style than a British golden ale. A home brewing experiment worth running.









Brew day went smoothly — the wort came together well and the fermenter is now sealed up with the NEIPA yeast pitched and the Citra hops added for dry hopping. The next few weeks of fermentation will tell whether the experiment paid off. Check the bottling post to see the results!
